The Bikini Cocktail

Makes enough for 10 people

To make the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Drink (makes 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Method

To prepare the Cordial: Place every components inside a pot, heat until it reaches a gentle boil, agitating so the sugar melts. Next, turn off the heat and leave to cool fully. Pour to a clean bottle, close it keeping it chilled, where it will keep for up to one month.

For the Cocktail Base: Combine the specified liquid ingredients in a large bottle, allow it to infuse for 60 minutes, then filter it preferably using a fine cloth, so it's perfectly clear.

To serve: Add 85ml from the cocktail base into your cocktail shaker packed with ice, gently stirring carefully for about 60 seconds to chill. Filter to a chilled martini glass or similar, garnish with a few cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
